Mexico's coffee infrastructure is largely in transition facing increasing costs of production, declining profitability, and widespread lack of transparency. Faced with these obstacles, farmers are demanding a different way forward. Yosonicaje represents an enormous effort of selecting and vetting quality, and not just in the cup. The coffee must pass strict moisture content and water activity parameters and the farmers are paid a rate that far exceeds traditional channels.

The cup profile is delicate and subtly complex, with a brilliant depth of sweetness and clarity. On the nose is a dynamic mix of soft fruits and spice with a lingering sweetness. In the cup initially is a burst of honey and as the cup cools transcends into a grape like juiciness with a lingering mouthfeel of stone ground chocolate. Yosonicaje is an exceptionally approachable coffee with a lighter acidity and thick mouthfeel.
