These farmers are members of ASORCAFE, an organization started in 2004 by 10 coffee growers sick of the low price they were getting for their parchment (processed, dried, unmilled coffee beans). Asorcafe has since become leaders in quality of the Inza region. Asorcafe in conjunction with private and state organizations, provides aid to their members including subsidies for domestic economy, education, job training, and healthcare services.
Inside Colombia’s department of Cauca lies the province of Inza known in Colombia as La Tierra Adentro. The province is about a two hour drive from Popayan and La Plata in either direction. The famous Paez river runs east through the valley, connecting Cauca and Huila. One buyer, in particular, Aleco Chigounis, began working in this region right away and, due to the strong relationship he formed and the way they discovered coffees together, helped inspire him to start Red Fox Coffee Merchants. As our main source of green coffee, we at Variety are certainly grateful for this relationship.
Aromatically this coffee presents with a strong tone of dried white grapes, with a fresh cherry pie like aroma as it is brewed. Notes of Fuji apple and salted caramel shine in a stunningly soft grape-like acidity.
